Gain a comprehensive introduction to the world of  bars — from understanding global market dynamics to mastering formulation, ingredient functionality, and essential processing steps.

  • Build foundational knowledge of cereal, protein, and fruit bars - from market trends to formulation and processing.
  • Understand key bar ingredients (grains, proteins, puffed products, rice crisps, fibers, sweeteners, binders, fats, inclusions, coatings) and their functional roles in texture, taste, nutrition, and shelf life.
  • Learn core bar processes: dry blending, binder preparation, mixing, forming, compression, cutting, cooling, enrobing.
  • Learn how to develop a new bar recipe and implement the various raw materials directly in practice on a small scale.
  • Participate in a live pilot line demo.

By the end of the course, you will be confident in applying the latest techniques, ingredients, and processes to develop high-quality bar products, supported by hands-on experience and live pilot line demonstrations.
